Something went wrong while changing the home directories for some vhosts. Is there a way to check if the operation succeeded for all vhosts?

Yes, you may use the below PowerShell commands to get the current home directories for all users on the server, including the vhost system users.
Open the PowerShell command prompt by typing this command in the Windows command prompt:

Paste the below lines to the PowerShell window to get the list of users and their home directories:
$computerName = "."
$computer = [ADSI]"WinNT://$computerName,computer"
$computer.psbase.Children | Where-Object { $_.psbase.schemaclassname -eq 'user' } | Format-Table Name, HomeDirectory –autoSize

The output should look like:
{user1} {C:\inetpub\vhosts\}
{user2} {C:\inetpub\vhosts\}
